Philosophy

Coffee has an archetype.

An archetype is the coffee at its most itself: the acidity and fruit a lot already carries. Dark roasting writes over that. We roast light and stop early, closer to the bean's first draft than its edit. Single-origin, traceable, dated on the pouch.

02 — Manifesto

We roast to reveal, not to mask.

Light to medium. Less caramelisation, more of the origin: florals, fruit, the acidity that defines a good lot.

We profile each coffee on its own terms, then keep that profile consistent, batch to batch.

We pay above market, we name the producer, we date the roast. When a lot runs out, it is gone until next harvest.
